Yields 10 people

Ingredients for the Citrus Syrup (makes 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g granulated sugar

To make the Premix (yields 850ml, to serve 10)

400ml good quality vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine cordial (from the recipe above)
Fresh cranberries, for garnish
Mandarin essential oil, as a final touch

Directions

For the Syrup: Put every ingredients in a pot, heat until it reaches a light boil, mixing until the sugar dissolves. After that, turn off the heat and leave to cool fully. Pour to a clean bottle, seal and refrigerate it in the refrigerator, where it will keep for about four weeks.

To make Batch Mix: Pour all the liquids into a large bottle, allow it to infuse for one hour, then strain preferably using cheesecloth, making it completely strained.

To serve: Add 85ml of the batch mix to a mixing glass filled with ice, and agitate lightly for one minute until cold. Pour to a chilled martini glass or equivalent, garnish with a few cranberries and complete it using a light spray of the essential oil over the drink.
